The Occidental makes every effort to create seasonal dishes from nearby farms. Whipple Farm in VA provides biodynamic produce; J&L Green Farm also in VA supplies the restaurant with eggs and pork; Roseda Farm in MD provides all natural beef. These are just a few examples!
